Well, because they had multiple players perform at or near all-sec levels in-conference.

For reference:

Jonathan Vastine vs Justin Lebron (All-SEC 2nd Team) SEC play:
Vasty: .327 with 7 home runs (and much better defense)
Lebron: .252 with 6 home runs

Braden Holcomb vs Derek Curiel, Jace Laviolette, and Robbie Burnett (all on the 2nd team) in SEC play
Holcomb: .338, 1.149 OPS, 8 HRs
Curiel: .296, .825 OPS, 3 HRs
Laviolette: .233, .979 OPS, 9 HRs
Burnett: .300, 1.090 OPS, 8 HRs

Colin Barczi vs Rylan Galvan (All-Sec 1st team) in SEC play:
Barczi: .279, 7 HRs, 22 RBIs
Galvan: .295, 8 HRs, 22 RBIs

Riley Nelson vs Jared Jones and Cam Kozeal (both All-SEC 2nd Team 1Bs) in SEC play:
Nelson: .366, 1.066 OPS, 6 HRs
Jones: .264, .805 OPS, 7 HRs
Kozeal: .333, 1.011 OPS, 9 HRs
Nelson is also by FAR the best defender of the three.

While I don't think anyone was a real snub other than Nelson because of their inconsistent play, it's easy to see why this team is having so much success now. They legitimately have 4 position players producing at all-sec levels, as well as a top-tier pitching staff, too.

Vastine should 110% been on the all-defensive team over Justin Lebron, btw.
